Ingredients
- 8 oz bucatini pasta
- 4 oz pancetta, diced
- 1 can crushed tomatoes
- 1 medium onion, finely chopped

- 1/2 cup freshly grated pecorino romano cheese
- 2 tbsp olive oil
Instructions
- heat 2 tbsp olive oil in a large skillet over medium heat.
- add 4 oz diced pancetta and cook until crispy, about 5 minutes.
- add 1 medium chopped onion and 2 minced garlic cloves, cooking until softened, about 3 minutes.
- stir in 1/2 tsp red pepper flakes and 1 can crushed tomatoes, then simmer for 15 minutes.
- meanwhile, cook 8 oz bucatini pasta according to package instructions.
- reserve 1/2 cup of pasta cooking water, then drain pasta.
- toss cooked pasta in the sauce, adding reserved pasta water as needed for consistency.
- taste and season with salt and black pepper, then top with 1/2 cup grated pecorino romano cheese.
