Ingredients
- 4 large bell peppers
- 1 cup couscous, cooked
- 1 cup cherry tomatoes, halved
- 1 cup basil leaves, chopped
- 1 cup mozzarella cheese, shredded
- 2 Tbsp olive oil
- 1 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off peppers; remove seeds and membranes.
- Combine couscous, tomatoes, basil, mozzarella, olive oil, and salt in a bowl.
- Stuff peppers with couscous mixture; place in a baking dish.
- Cover with foil; bake for 20 minutes.
- Remove foil; bake for 5 minutes until peppers are tender and cheese is melted.
