Ingredients

  • 4 large bell peppers
  • 1 cup couscous, cooked
  • 1 cup cherry tomatoes, halved
  • 1 cup basil leaves, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 Tbsp olive oil
  • 1 tsp salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers; remove seeds and membranes.
  3. Combine couscous, tomatoes, basil, mozzarella, olive oil, and salt in a bowl.
  4. Stuff peppers with couscous mixture; place in a baking dish.
  5. Cover with foil; bake for 20 minutes.
  6. Remove foil; bake for 5 minutes until peppers are tender and cheese is melted.
