Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 cloves garlic, roasted
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pulse the cauliflower florets in a food processor until finely grated.
  3. Transfer the grated cauliflower to a clean towel and wring out excess moisture.
  4. In a bowl, mix together the cauliflower, egg, Parmesan cheese, salt, and pepper until well combined.
  5. Line a baking sheet with parchment paper. Spread the cauliflower mixture into a 12-inch circle, about 1/4 inch thick.
  6. Bake for 20 minutes, until golden and crispy.
  7. While the crust bakes, heat olive oil in a small pan over low heat. Add roasted garlic, oregano, and basil, cooking for 2 minutes to infuse the oil.
  8. Remove the crust from the oven and brush it with the herb-infused olive oil.
  9. Add your choice of toppings and bake for another 10 minutes, until toppings are cooked.
