Try a gluten-free twist on traditional pizza with this cauliflower pizza crust, enhanced by roasted garlic and herb olive oil.
Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 3 cloves garlic, roasted
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Pulse the cauliflower florets in a food processor until finely grated.
- Transfer the grated cauliflower to a clean towel and wring out excess moisture.
- In a bowl, mix together the cauliflower, egg, Parmesan cheese, salt, and pepper until well combined.
- Line a baking sheet with parchment paper. Spread the cauliflower mixture into a 12-inch circle, about 1/4 inch thick.
- Bake for 20 minutes, until golden and crispy.
- While the crust bakes, heat olive oil in a small pan over low heat. Add roasted garlic, oregano, and basil, cooking for 2 minutes to infuse the oil.
- Remove the crust from the oven and brush it with the herb-infused olive oil.
- Add your choice of toppings and bake for another 10 minutes, until toppings are cooked.
- Slice and serve warm.
