Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cups baby spinach

Instructions

  1. Heat olive oil in a large 9-inch skillet over medium heat. Add the onions and garlic, sautéing for about 3 minutes until fragrant.
  2. Add the chicken breasts to the skillet, cooking for about 5-7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add the carrots and celery. Sauté for 5 minutes until slightly tender.
  4. Pour in the chicken broth, and bring to a simmer. Add Italian seasoning, salt, and black pepper.
  5. Return the chicken to the skillet, cover, and let it simmer for 30 minutes until the chicken is cooked through.
  6. Remove the chicken, shred it with forks, and return it to the pot.
  7. Stir in the heavy cream and spinach, simmering for another 5 minutes until the spinach wilts.
  8. Serve the soup hot, garnished with additional herbs if desired.
