Ingredients
- 1 pound boneless skinless chicken breasts
- 2 carrots, sliced
- 2 stalks celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cups baby spinach
Instructions
- Heat olive oil in a large 9-inch skillet over medium heat. Add the onions and garlic, sautéing for about 3 minutes until fragrant.
- Add the chicken breasts to the skillet, cooking for about 5-7 minutes per side until golden brown. Remove and set aside.
