Ingredients

Instructions

  1. Bring the vegetable broth to a simmer in a saucepan and keep it warm.
  2. In a separate pan, melt the butter over medium heat. Add the chopped shallots and cook for 2 to 3 minutes until translucent.
  3. Stir the arborio rice into the pan, coating it in the butter. Toast for about 2 minutes.
  4. Pour the white wine into the rice mixture and let it simmer until the liquid is absorbed.
  5. Add the warm vegetable broth, one ladleful at a time, to the rice, stirring constantly. Allow each addition to be absorbed before adding the next.
  6. Continue this process until the rice becomes creamy and is cooked al dente, approximately 20 minutes.
  7. Once the rice is cooked, stir in the chanterelle mushrooms and grated Parmesan cheese. Mix until the cheese is melted and the mushrooms are heated through.
  8. If needed, adjust the seasoning with salt and pepper.
  9. Serve immediately, garnished with fresh parsley and additional Parmesan cheese.
