Instructions
- Heat 2 Tbsp of oil in a large pot over medium heat.
- Add the bruised lemongrass, sliced galangal, and kaffir lime leaves. Saute for 2-3 minutes until fragrant.
- Add the chicken pieces, salt, and sugar to the pot. Cook for about 5-7 minutes until the chicken is browned on all sides.
- Pour in the coconut milk and bring to a simmer. Lower the heat, cover, and cook for 20-25 minutes until the chicken is fully cooked and tender.
- Remove from heat and let it rest for a few minutes before serving.
