Ingredients

  • 1 whole chicken, cut into pieces
  • 6 cups water
  • 2 stalks lemongrass, smashed

  • 5 pieces lime leaves
  • 1 cup bean sprouts
  • 2 Tbsp fried shallots
  • 2 Tbsp soy sauce

Instructions

  1. Place the chicken pieces in a large pot with water, lemongrass, galangal, and lime leaves. Bring to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes.
  2. Remove the chicken from the broth and let it cool slightly. Shred the meat, discarding the bones, and return the shredded chicken to the pot.
  3. Add the bean sprouts to the pot and simmer for 5 minutes until they are tender.
  4. Stir in the soy sauce and mix well.
  5. Ladle the soup into bowls and garnish with fried shallots. Serve immediately.
