Instructions
- In a bowl, combine all-purpose flour, granulated sugar, and salt. Cut in chilled butter until the mixture becomes crumbly.
- Stir in white wine and egg yolk to form a dough. Knead until smooth, then cover and chill for 1 hour.
- In a separate bowl, mix ricotta cheese, powdered sugar, and vanilla extract until well combined. Stir in chocolate chips and chopped pistachios.
- Roll out the chilled dough on a floured surface. Cut into circles and wrap around metal cannoli tubes, sealing edges with water.
- In a deep skillet, heat vegetable oil to 375°F (190°C). Fry the cannoli shells until they are golden, about 1-2 minutes. Drain on paper towels.
- Once cool, carefully remove metal tubes from the shells. Fill each shell with the ricotta mixture using a pastry bag.
