Curry Puffs (Karipap) are a popular Malaysian snack featuring a savory filling of spiced potatoes and minced meat wrapped in a flaky pastry shell. These handheld treats are excellent for casual snacking or as appetizers at gatherings, offering a combination of fragrant curry flavors and a buttery pastry texture. The process includes preparing a curry mixture, shaping the pastry, filling it, and cooking until perfectly crispy. These treats provide a delightful taste of Malaysian cuisine that can be enjoyed at home.

Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 lb ground beef
  • 1 whole onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp curry powder
  • 1 tsp turmeric powder
  • 1/2 cup frozen peas
  • 2 Tbsp vegetable oil
  • 1 pack frozen puff pastry, thawed

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent and fragrant, about 3 minutes.
  3. Add the ground beef to the skillet, cooking until it’s browned completely.
  4. Stir in the curry powder and turmeric powder, mixing well with the beef and cooking for another minute to develop the flavors.
  5. Add the diced potatoes and frozen peas, and season the mixture with a pinch of salt and pepper. Cook until the potatoes are tender, approximately 10 minutes, stirring occasionally.
  6. Once the filling is cooked, remove it from the heat and allow it to cool slightly.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the thawed puff pastry on a flat surface and cut it into circles approximately 4 inches in diameter.
  9. Place a spoonful of the cooled filling onto each pastry circle, fold them over to create a half-moon shape, and seal the edges by pressing with a fork.
  10. Arrange the filled puffs on a baking sheet lined with parchment paper.
  11. Bake the Curry Puffs in the preheated oven for 20 to 25 minutes, or until the pastry turns golden brown and crispy.
  12. Remove from the oven and allow them to cool slightly before serving.
