  • 1 cup small pasta (such as ditalini or elbow)
  • 1 16 oz can cannellini beans, drained and rinsed
  • 2 cups chopped spinach or kale
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions

  1. Heat a large pot over medium heat and add a drizzle of olive oil. Once hot, add the chopped onions, sliced carrots, and diced celery, cooking until they begin to soften, about 5 minutes.
  2. Stir in the minced garlic, tomato paste, and diced tomatoes, cooking for an additional 2 to 3 minutes to blend the flavors.
  3. Pour the vegetable broth into the pot and increase the heat to bring the mixture to a simmer.
