Instructions

  1. In a food processor, combine chickpeas, parsley, onion, garlic, cumin, coriander, cayenne, flour, baking powder, and salt. Pulse until mixture is well combined but still slightly coarse.
  2. Shape the mixture into small balls, then flatten slightly to create patties.
  3. In a skillet, heat the vegetable oil over medium heat. Fry the patties for 2-3 minutes on each side until they are golden brown and crispy.
  4. Open each pita bread and fill with shredded lettuce, chopped tomato, sliced cucumber, sliced red onion, and falafel patties. Drizzle with tahini sauce.
