Farro and Mushroom Risotto with Thyme offers a hearty dish that brings together the nutty flavor of farro with earthy mushrooms and aromatic thyme. This risotto achieves its creamy texture without traditional Arborio rice, presenting a nutritious alternative. It’s a dish that’s great for those who enjoy risotto with a fresh twist or have a particular love for mushrooms. The flavors meld to create a comforting meal perfect for any night in or a special occasion.
Ingredients
- 1 cup farro, rinsed
- 1/2 oz dried porcini mushrooms
- 4 cups vegetable broth
- 2 Tbsp olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 1/4 cup dry white wine
- 1 tsp fresh thyme leaves
- 1/2 cup Parmesan cheese, grated
- 2 Tbsp butter
Instructions
- Soak the dried porcini mushrooms in 1 cup of hot water in a small bowl for 20 minutes, then strain and reserve the liquid.
- Bring the vegetable broth to a simmer in a saucepan. Keep it warm over low heat.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2-3 minutes until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the sliced cremini mushrooms and cook for about 5 minutes until they release their juices and start to brown.
- Add the rinsed farro to the skillet and toast for 2 minutes, stirring constantly.
- Pour in the white wine and cook until it is absorbed by the farro.
- Add the soaked porcini mushrooms, thyme leaves, and a ladleful of warm vegetable broth to the skillet. Cook, stirring frequently, until the broth is absorbed.
- Continue adding the broth, one ladleful at a time, stirring constantly, for 20-25 minutes or until the farro is creamy and cooked to your desired doneness.
- Stir in the grated Parmesan cheese and butter until melted and creamy. Adjust seasoning with salt and pepper.
- Serve hot, garnished with extra thyme leaves and a sprinkle of Parmesan cheese.
