Ingredients
- 1 medium acorn squash
- 1 cup farro, cooked
- 1/2 lb sausage, ground

- 2 tbsp olive oil
- salt, to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Brush the cut sides of the squash with olive oil and place the halves, cut side down, on a baking sheet.
- Roast in the oven for 30 minutes or until tender.
- In a skillet, heat the olive oil over medium heat.
- Cook the sausage until browned, approximately 5-7 minutes.
- Add the onion and garlic to the skillet and cook until softened, about 3-4 minutes.
- Stir in the cooked farro, sage, and Parmesan cheese, mixing well.
- Season the mixture with salt and pepper to taste.
- Divide the sausage and farro mixture evenly among the roasted squash halves.
- Return the stuffed squash to the oven and bake for an additional 15 minutes.
- Remove from the oven and allow to cool slightly before serving.
