Ingredients

  • 1 medium acorn squash
  • 1 cup farro, cooked
  • 1/2 lb sausage, ground
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sage, fresh, chopped
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • salt, to taste
  • pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides of the squash with olive oil and place the halves, cut side down, on a baking sheet.
  4. Roast in the oven for 30 minutes or until tender.
  5. In a skillet, heat the olive oil over medium heat.
  6. Cook the sausage until browned, approximately 5-7 minutes.
  7. Add the onion and garlic to the skillet and cook until softened, about 3-4 minutes.
  8. Stir in the cooked farro, sage, and Parmesan cheese, mixing well.
  9. Season the mixture with salt and pepper to taste.
  10. Divide the sausage and farro mixture evenly among the roasted squash halves.
  11. Return the stuffed squash to the oven and bake for an additional 15 minutes.
  12. Remove from the oven and allow to cool slightly before serving.
