Gajar ka Halwa, also called carrot halwa, is a well-loved Indian dessert crafted with grated carrots, milk, sugar, ghee, and nuts. This sweet dish is cherished for its creamy texture and delightful taste that combines the natural sweetness of carrots with the richness of dairy and nuts. Slow-cooking the carrots in milk enhances the flavor by caramelizing them, offering a comforting dessert suitable for special occasions or as a warm indulgence on chilly days.
Ingredients
- 1 lb carrots, grated
- 4 cups whole milk
- 1 cup sugar
- 1/2 cup ghee
- 1/2 cup mixed nuts, chopped
Instructions
- In a heavy-bottomed pan, heat the ghee over low heat and add the grated carrots. Cook until the carrots are soft and aromatic, stirring occasionally, for about 10 to 15 minutes.
- Add the milk to the pan and increase the heat to medium. Cook the mixture, stirring frequently, until most of the liquid evaporates, approximately 30 minutes.
- Once the mixture thickens, add the sugar and mix well. Continue to cook, stirring constantly, until the sugar dissolves and the halwa reaches a pudding-like consistency, about 10 minutes.
- Stir in the chopped nuts and cook for an additional 5 minutes, ensuring even distribution.
- Remove from heat and allow to cool slightly before serving. If desired, garnish with additional nuts.
