  • 1 yellow bell pepper, cut into pieces
  • 1 cup cherry tomatoes
  • 1 red onion, cut into wedges

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine olive oil, balsamic vinegar, dried oregano, salt, and black pepper. Whisk together to create the marinade.
  3. Add zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion to the bowl. Toss until all the vegetables are evenly coated in the marinade.
