Italian Herb Farro Risotto with Parmesan

Ingredients

  • 1 cup farro, rinsed
  • 4 cups vegetable or chicken broth
  • 2 Tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 Tbsp fresh thyme leaves
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a medium saucepan, bring the broth to a simmer and keep warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until softened.
  3. Add the rinsed farro to the skillet and toast for 1-2 minutes, stirring occasionally.
  4. Pour in the dry white wine, stirring constantly until absorbed, about 2-3 minutes.
  5. Begin adding the warm broth to the farro, one ladleful at a time, stirring frequently until each addition is absorbed before adding more.
  6. Continue this process until the farro is creamy and cooked to al dente, about 30-35 minutes.
  7. Stir in the fresh thyme leaves, chopped parsley, and grated Parmesan cheese. Mix well to combine.
  8. Taste and adjust seasoning with salt and pepper as desired. Serve immediately, garnishing with additional Parmesan cheese and herbs if desired.
