- 8 oz spaghetti
- 1 lb Italian sausage, casings removed
- 1 bunch kale, stems removed and chopped

- Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- In a large skillet over medium heat, cook the Italian sausage until browned and cooked through. Remove from the skillet and set aside.
- Using the same skillet, add the olive oil and garlic, sautéing until the garlic is fragrant, about 1 minute.
