Ingredients

  • 1 cup lentils, cooked

  • 1 Tbsp fresh rosemary, chopped
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 skewers wooden skewers, soaked in water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the cooked lentils, zucchini, red bell pepper, yellow bell pepper, rosemary, olive oil, salt, and black pepper until well coated.
  3. Thread the mixture onto the soaked wooden skewers, alternating the vegetables and lentils for even cooking.
