Ingredients

  • 1 cup brown lentils

  • 6 cups vegetable broth

  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat until shimmering.
  3. Add chopped onions, minced garlic, diced carrots, and diced celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
  4. Stir in cumin, paprika, turmeric, cayenne pepper, and black pepper, allowing the spices to cook for 1 minute until fragrant.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, until the lentils are tender.
  6. Taste and adjust the seasoning with salt as needed.
  7. Ladle the soup into bowls and serve hot.
