Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1 cup cheddar cheese, shredded
  • 4 large flour tortillas
  • 8 slices bacon, cooked and crumbled
  • 1 tablespoon butter
  • 2 tomatoes, diced
  • 1 small onion, diced
  • 1 jalapeño, seeded and diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, whisk together the eggs and milk. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add butter.
  3. Pour the egg mixture into the skillet, stirring gently until scrambled. Remove from heat.
  4. Lay a tortilla on a flat surface. Sprinkle with 1/4 cup of cheddar cheese, add a quarter of the scrambled eggs and bacon, then top with another 1/4 cup of cheese.
  5. Fold the tortilla over to seal the fillings.
  6. Heat the skillet over medium heat. Cook each quesadilla for 3-4 minutes per side until the tortilla is golden brown and the cheese has melted.
  7. In a bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and lime juice. Season with salt and pepper.
  8. Slice each quesadilla into wedges and serve with fresh pico de gallo.
