Start your day with a hearty and flavorful loaded breakfast quesadilla, paired with vibrant fresh pico de gallo.
Ingredients
- 4 large eggs
- 1/4 cup milk
- 1 cup cheddar cheese, shredded
- 4 large flour tortillas
- 8 slices bacon, cooked and crumbled
- 1 tablespoon butter
- 2 tomatoes, diced
- 1 small onion, diced
- 1 jalapeño, seeded and diced
- 1/4 cup cilantro, chopped
- 1 tablespoon lime juice

Instructions
- In a bowl, whisk together the eggs and milk. Season with salt and pepper.
- Heat a non-stick skillet over medium heat and add butter.
- Pour the egg mixture into the skillet, stirring gently until scrambled. Remove from heat.
- Lay a tortilla on a flat surface. Sprinkle with 1/4 cup of cheddar cheese, add a quarter of the scrambled eggs and bacon, then top with another 1/4 cup of cheese.
- Fold the tortilla over to seal the fillings.
- Heat the skillet over medium heat. Cook each quesadilla for 3-4 minutes per side until the tortilla is golden brown and the cheese has melted.
- In a bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and lime juice. Season with salt and pepper.
- Slice each quesadilla into wedges and serve with fresh pico de gallo.
