Instructions

  1. Prepare the grape leaves or zucchinis by blanching them in boiling water for 2 minutes. Drain and set aside.
  2. In a mixing bowl, combine the washed and drained rice, lemon juice, olive oil, cumin, and cinnamon. Mix well until all ingredients are evenly distributed.
  3. Place a grape leaf or zucchini slice on a flat surface, vein side up. Spoon a small amount of the rice mixture onto the leaf or slice and roll it up tightly, folding in the sides as you roll.
  4. Continue the process until the rice mixture is used up, ensuring each roll is secure.
  5. Arrange the stuffed grape leaves or zucchinis in a pot, packing them tightly together to prevent unrolling.
  6. Pour enough water over the stuffed vegetables to cover them completely.
  7. Place a heavy plate on top of the stuffed vegetables to keep them submerged during cooking.
  8. Cover the pot with a lid and simmer over low heat for 1 hour, allowing the flavors to meld together.
  9. Once cooked, remove the plate and serve the Mahshi warm, optionally drizzling with olive oil and a squeeze of lemon juice for added flavor.
