- 1 cup warm water
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour

- 1/4 cup unsalted butter, melted
- 40 small mozzarella cheese cubes
- 10 cups water
- 2/3 cup baking soda
- 2 egg yolks, beaten
- 2 tablespoons coarse sea salt
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
- Add flour, salt, and melted butter to the yeast mixture. Knead until a smooth dough forms, about 10 minutes.
- Place the dough in an oiled bowl, cover, and let it rise for 1 hour or until doubled in size.
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Divide the dough into 24 pieces and flatten each piece. Place a cheese cube in the center and fold the edges over to seal the cheese inside.
- Bring 10 cups of water and baking soda to a boil in a large pot. Boil the pretzel bites, 5 at a time, for 30 seconds each.
- Remove with a slotted spoon and place on the prepared baking sheet.
- Brush each pretzel bite with beaten egg yolk and sprinkle with coarse sea salt.
- Bake in the preheated oven for 12-14 minutes, until golden brown.
- Let the pretzel bites cool on a wire rack for a few minutes before serving.
