Ingredients

  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 40 small mozzarella cheese cubes
  • 10 cups water
  • 2/3 cup baking soda
  • 2 egg yolks, beaten
  • 2 tablespoons coarse sea salt

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
  2. Add flour, salt, and melted butter to the yeast mixture. Knead until a smooth dough forms, about 10 minutes.
  3. Place the dough in an oiled bowl, cover, and let it rise for 1 hour or until doubled in size.
  4. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  5. Divide the dough into 24 pieces and flatten each piece. Place a cheese cube in the center and fold the edges over to seal the cheese inside.
  6. Bring 10 cups of water and baking soda to a boil in a large pot. Boil the pretzel bites, 5 at a time, for 30 seconds each.
  7. Remove with a slotted spoon and place on the prepared baking sheet.
  8. Brush each pretzel bite with beaten egg yolk and sprinkle with coarse sea salt.
  9. Bake in the preheated oven for 12-14 minutes, until golden brown.
  10. Let the pretzel bites cool on a wire rack for a few minutes before serving.
