Mixed Rice with Lentils, also known as Adas Polo in Persian cuisine, is a popular dish that combines the earthy taste of lentils with fragrant basmati rice. This recipe is a staple in Iranian households, often enjoyed during special occasions. Ingredients

  • 1 cup basmati rice
  • 1 cup brown lentils
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 cup raisins
  • 2 medium onions, thinly sliced
  • 2 medium potatoes, peeled and sliced
  • 3 Tbsp vegetable oil

Instructions

  1. Rinse the basmati rice in a bowl of water until the water runs clear, then soak it in water for 30 minutes.
  2. In a separate bowl, rinse the brown lentils and soak them in water for 30 minutes.
  3. Heat 2 Tbsp of vegetable oil in a large pot over medium heat. Add the thinly sliced onions and cook until golden brown and caramelized. Remove half of the onions and set aside for garnish.
  4. In the same pot, add the remaining oil and fry the potato slices until golden brown. Remove and set aside.
  5. Drain the soaked rice and lentils. In a new pot, bring water to a boil, then add the rice. Cook for 10 minutes, then add the lentils. Continue cooking for another 10 minutes until both are tender. Drain the mixture.
  6. In a small bowl, mix the ground cumin, turmeric, and cinnamon. Add the spice mixture to the rice and lentils, stirring gently to combine.
  7. In the pot used for frying, layer the rice and lentil mixture, alternating with the reserved caramelized onions, raisins, and fried potatoes. Cover and cook over low heat for 30 minutes.
  8. Remove from heat and let it rest for a few minutes before serving.
