Ingredients
- 1 cup brown lentils, rinsed and drained
- 1 whole onion, chopped
- 2 whole garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 4 cups vegetable broth
- 1 14 oz can diced tomatoes
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1/4 cup raisins
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, heat 2 Tbsp of oil over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until soft.
- Add the ground cumin, coriander, and cinnamon. Cook for 1 minute until the spices are fragrant.
- Stir in the rinsed and drained lentils, vegetable broth, diced tomatoes, diced carrots, and diced potatoes. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils and vegetables are tender.
- Stir in the raisins and season with salt and pepper to your preference. Cook for an additional 5 minutes to allow the flavors to meld.
- Remove from heat and garnish with the chopped fresh cilantro before serving.
