Ingredients

  • 1 cup brown lentils, rinsed and drained
  • 1 whole onion, chopped
  • 2 whole garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 4 cups vegetable broth
  • 1 14 oz can diced tomatoes
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1/4 cup raisins
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat 2 Tbsp of oil over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until soft.
  2. Add the ground cumin, coriander, and cinnamon. Cook for 1 minute until the spices are fragrant.
  3. Stir in the rinsed and drained lentils, vegetable broth, diced tomatoes, diced carrots, and diced potatoes. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils and vegetables are tender.
  5. Stir in the raisins and season with salt and pepper to your preference. Cook for an additional 5 minutes to allow the flavors to meld.
  6. Remove from heat and garnish with the chopped fresh cilantro before serving.
