Ingredients

  • 1 cup orzo pasta
  • 8 oz mixed wild mushrooms, sliced
  • 4 cups vegetable broth

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  3. Add the mushrooms and cook for 5 minutes until browned.

  6. Add the vegetable broth gradually, 1 cup at a time, stirring constantly, until the liquid is absorbed each time.
  7. Continue adding broth and stirring for about 20 minutes until the orzo is creamy and tender.
  8. Mix in the Parmesan cheese, butter, and parsley. Adjust seasoning with salt and pepper, if needed.
  9. Serve immediately, garnished with additional Parmesan and parsley.
