  • 4 large eggs

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced bell peppers and onion, and cook until softened, which takes about 10 minutes.
  3. Stir in the garlic, tomatoes, and Espelette pepper, and continue cooking for another 5 minutes.
  4. Create 4 wells in the mixture and crack an egg into each well.
  5. Cover the skillet and cook until the eggs are set, about 5 minutes.
