Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon blackening seasoning
  • 1 cup mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 medium lime, juiced

Instructions

  1. In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, and cover. Simmer for 15 minutes or until the quinoa is cooked. Fluff with a fork and let it cool.
