This vibrant quinoa salad combines spicy blackened shrimp with refreshing mango salsa for a nutritious meal.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon blackening seasoning
- 1 cup mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 medium lime, juiced
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, and cover. Simmer for 15 minutes or until the quinoa is cooked. Fluff with a fork and let it cool.
- In a bowl, combine the shrimp with olive oil and blackening seasoning, making sure each shrimp is well coated.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are blackened and cooked through.
- In another bowl, combine the diced mango, red onion, cilantro, lime juice, honey, salt, and pepper. Mix well to combine the salsa.
- Arrange the cooked quinoa on a serving platter. Top with blackened shrimp and spoon the mango salsa over everything.
