- 1/2 tsp paprika
Instructions
- Rinse the quinoa under cold water until the water runs clear to remove any bitterness.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, cover, and reduce heat to low. Cook for about 15 minutes until the quinoa is tender and the water is absorbed.
- In a large skillet, heat olive oil over medium heat. Add the garlic, red bell pepper, and carrot. Cook for approximately 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the peas, cumin, and papaprika to the skillet. Stir to combine and cook for an additional 3-4 minutes until all the vegetables are tender.
- Fold in the cooked quinoa and parsley, mixing well. Taste and adjust the seasoning if needed.
- Remove from heat and serve on a dish.
