Ingredients
- 2 cups basmati rice
- 1/2 lb string beans, trimmed and cut
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- salt, to taste
- black pepper, to taste
- 2 tbsp olive oil
Instructions
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2 to 3 minutes until translucent.
- Add the string beans, ground turmeric, ground cumin, and ground cinnamon to the pot, and cook for 5 minutes, stirring occasionally.
- Add the drained rice to the pot and season with salt and black pepper to taste. Pour in enough water to cover the rice by 1 inch.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and adjust seasoning if needed before serving.
