Ingredients
- 2 cups arborio rice
- 1/2 cup dry white wine

- 2 Tbsp butter

- In a saucepan, heat the broth until it reaches a simmer and keep warm.
- In a separate large pan, melt 1 Tbsp of butter over medium heat.
- Add the finely chopped onion and minced garlic, and sauté until the onion is translucent, about 2 to 3 minutes.
- Add the arborio rice and toast for 2 minutes, stirring frequently.
- Pour in the dry white wine, stirring until the wine is fully absorbed by the rice.
- Begin adding the simmering broth, one ladle at a time, to the rice, stirring constantly until each addition is absorbed before adding the next.
- Continue adding the broth and stirring for about 18 to 20 minutes, until the rice is creamy and al dente.
- Stir in the squid ink, grated Parmesan cheese, and the remaining Tbsp of butter until well incorporated.
- Taste and adjust seasoning with salt and pepper, as desired.
- Serve immediately, garnished with additional Parmesan cheese, if desired.
