These roasted garlic and herbs mashed potatoes combine fluffy texture with rich flavor, perfect for any meal.

Ingredients

  • 2 heads garlic, roasted
  • 2 1/2 pounds russet potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off garlic heads, drizzle with olive oil, and wrap in foil. Roast for 40-45 minutes until soft.
  3. In a large pot, boil cubed potatoes in salted water until tender, about 15-20 minutes.
  4. Drain potatoes thoroughly and return to the pot.
  5. Squeeze roasted garlic out of the skins and add to the potatoes.
  6. Add heavy cream, melted butter, rosemary, thyme, salt, and pepper to the pot.
  7. Mash the potatoes until smooth and creamy. Adjust seasoning to taste.
