These roasted garlic and herbs mashed potatoes combine fluffy texture with rich flavor, perfect for any meal.
Ingredients
- 2 heads garlic, roasted
- 2 1/2 pounds russet potatoes, peeled and cubed
- 1 cup heavy cream
- 1/2 cup unsalted butter, melted
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the tops off garlic heads, drizzle with olive oil, and wrap in foil. Roast for 40-45 minutes until soft.
- In a large pot, boil cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain potatoes thoroughly and return to the pot.
- Squeeze roasted garlic out of the skins and add to the potatoes.
- Add heavy cream, melted butter, rosemary, thyme, salt, and pepper to the pot.
- Mash the potatoes until smooth and creamy. Adjust seasoning to taste.
