Saltfish fritters are a delightful Caribbean dish featuring salted cod, flour, and a blend of herbs and spices. These crispy fritters are great as a snack or appetizer, offering savory flavors with a crunchy texture. The preparation involves soaking the saltfish to reduce saltiness and then combining it with a batter before frying to a golden finish. These fritters can be enjoyed alone or with a dipping sauce, making them a popular choice at gatherings.

Ingredients

  • 1 pound salted cod, soaked and flaked
  • 1 cup all-purpose flour
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp baking powder
  • 1 tsp thyme, chopped
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 cup water
  • 1 quart vegetable oil, for frying

Instructions

  1. Soak the salted cod in water for 2-3 hours, changing the water several times to remove excess salt.
  2. In a bowl, combine the flaked cod, flour, onion, garlic, baking powder, thyme, paprika, and cayenne pepper.
  3. Gradually add water to the mixture, stirring until a thick batter forms.
  4. Heat oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  5. Carefully drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3 to 4 minutes per side.
  6. Remove fritters from oil using a slotted spoon and drain on paper towels.
