Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup sugar
- 1 egg yolk
- 2 tablespoons cold water
- 1 mango, sliced
- 2 kiwis, peeled and sliced
- 2 passionfruits, pulp scooped out
- 1/4 cup apricot jam
- 2 tablespoons water
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine flour and sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water, mixing until the dough comes together.
- Press the dough into a 9-inch tart pan. Prick the bottom with a fork to prevent puffing.
- Bake for 20-25 minutes or until golden brown. Let it cool completely.
- Arrange the mango and kiwi slices on the cooled crust.
- Spoon the passionfruit pulp over the fruit slices.
- In a small saucepan, heat the apricot jam and water over low heat until smooth.
- Brush the apricot glaze over the fruit to give a shiny finish.
- Chill the tart in the refrigerator for at least 30 minutes before serving.
