Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 mango, sliced
  • 2 kiwis, peeled and sliced
  • 2 passionfruits, pulp scooped out
  • 1/4 cup apricot jam
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine flour and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the egg yolk and cold water, mixing until the dough comes together.
  5. Press the dough into a 9-inch tart pan. Prick the bottom with a fork to prevent puffing.
  6. Bake for 20-25 minutes or until golden brown. Let it cool completely.
  7. Arrange the mango and kiwi slices on the cooled crust.
  8. Spoon the passionfruit pulp over the fruit slices.
  9. In a small saucepan, heat the apricot jam and water over low heat until smooth.
  10. Brush the apricot glaze over the fruit to give a shiny finish.
  11. Chill the tart in the refrigerator for at least 30 minutes before serving.
