Ingredients
- 8 oz rice vermicelli noodles
- 1 lb chicken breast, thinly sliced
- 1 lb shrimp, peeled and deveined
- 1 cup bean sprouts
- 1 cup cucumber, julienned
- 1/2 cup satay sauce
- 1/4 cup peanuts, crushed
Instructions
- Cook the rice vermicelli noodles according to package instructions. Drain and set aside.
- In a large pan, heat 1 tablespoon of oil over medium heat. Cook the sliced chicken until no longer pink, about 5-7 minutes. Remove from pan and set aside.
- In the same pan, add 1 tablespoon of oil and cook the shrimp until pink and cooked through, about 3-5 minutes. Remove from pan and set aside.
- In a small saucepan, heat the satay sauce over low heat until warm.
- Divide the cooked noodles among serving bowls. Top each with chicken, shrimp, bean sprouts, and cucumber. Drizzle with satay sauce and sprinkle with crushed peanuts.
