Ingredients

  • 1 whole chicken, cut into pieces
  • 1 14 oz can coconut milk

  • 1 tsp salt
  • 1 tsp sugar

Instructions

  1. Heat 2 Tbsp of oil in a large pot over medium heat.
  2. Add the bruised lemongrass, sliced galangal, and kaffir lime leaves. Saute for 2-3 minutes until fragrant.
  3. Add the chicken pieces, salt, and sugar to the pot. Cook for about 5-7 minutes until the chicken is browned on all sides.
  4. Pour in the coconut milk and bring to a simmer. Lower the heat, cover, and cook for 20-25 minutes until the chicken is fully cooked and tender.
  5. Remove from heat and let it rest for a few minutes before serving.
