Ingredients
- 8 oz dried egg noodles
- 1 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 1 whole onion, sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 2 tbsp soy sauce
- 1 tbsp tomato ketchup
- 1 tbsp brown sugar
- 1 cup bean sprouts
- 2 whole eggs
- 2 stalks green onions, sliced
- 1/4 cup fried shallots, for garnish
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a wok or large skillet, heat 1 tablespoon of oil over medium-high heat. Add shrimp and cook until pink and cooked through, about 2-3 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining oil. Add onion, garlic, and chili powder. Stir-fry for 2 minutes until fragrant.
- Push the vegetables to the side of the skillet and crack in the eggs. Scramble the eggs until cooked.
- Add the cooked noodles, soy sauce, tomato ketchup, and brown sugar to the skillet. Toss everything together until the noodles are well coated.
- Add the bean sprouts, cooked shrimp, and green onions. Stir-fry for another 2-3 minutes until the bean sprouts are slightly tender.
- Serve hot, garnished with fried shallots.
