Scallion pancakes are a savory Chinese dish often enjoyed for breakfast or as a side dish. Made from a simple dough enhanced with fresh chopped scallions and pan-fried for a crispy finish, these pancakes are commonly found as street food in China. The dough layers offer a crispy exterior and a tender interior, providing a delightful texture with each bite. They are best enjoyed hot, accompanied by soy sauce or chili oil for dipping, offering a flavorful and enjoyable eating experience.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup hot water
  • 1/2 cup scallions, chopped
  • 2 Tbsp vegetable oil
  • 1 tsp salt

Instructions

  1. In a large bowl, mix the all-purpose flour and hot water until a dough forms. Knead the dough for 5 minutes until smooth, then cover and let it rest for 30 min.
  2. Divide the rested dough into 4 equal portions. Roll out each portion into a thin circle on a lightly floured surface.
  3. Brush each dough circle with vegetable oil and evenly sprinkle with chopped scallions and salt.
  4. Roll each circle into a tight cylinder, then coil the cylinder into a spiral shape. Flatten the spiral gently into a pancake.
  5. Heat a small amount of vegetable oil in a pan over medium heat. Cook each pancake until golden brown and crispy on both sides, about 3-4 min per side.
  6. Serve the scallion pancakes immediately with soy sauce or chili oil for dipping.
