Ingredients
- 400 g paneer, cubed
- 2 Tbsp ghee or oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 medium tomatoes, pureed
- 1/4 cup cashews, soaked and blended into a paste
- 1/4 cup heavy cream
- 1 tsp kasuri methi (dried fenugreek leaves)
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- salt
- 1 Tbsp coriander leaves, chopped
Instructions
- Heat ghee or oil in a pan and fry the paneer cubes until golden brown. Remove and set aside.
- In the same pan, add more ghee if needed and sauté the onions until translucent, about 5-7 minutes.
- Add the garlic and ginger, cooking for about 1 minute until they release their aroma.
- Stir in the tomato puree and cook over medium heat until the oil separates from the mixture, about 8-10 minutes.
- Mix in the cashew paste, heavy cream, kasuri methi, garam masala, turmeric, red chili powder, and salt. Ensure the mixture is smooth and well-combined.
- Return the fried paneer cubes to the pan, gently mix them into the sauce, and simmer for 5-7 minutes until the sauce thickens to the desired consistency.
- Garnish with chopped coriander leaves and serve with rice or naan.
