Ingredients

  • 4 boneless skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 slices ham
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 pound asparagus, trimmed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Flatten each chicken breast to about 1/4 inch thickness using a meat mallet.
  3. Place a slice of Swiss cheese and a slice of ham on each chicken breast. Roll up tightly and secure with toothpicks.
  4. In a shallow dish, mix breadcrumbs, grated Parmesan cheese, salt, black pepper, and dried thyme.
  5. Coat each chicken roll in the breadcrumb mixture, pressing to adhere.
  6. Arrange the chicken rolls on one side of a large sheet pan. Drizzle with 1 tablespoon of olive oil.
  7. On the other side of the sheet pan, spread trimmed asparagus spears. Drizzle with remaining 1 tablespoon of olive oil, and season with a little salt and pepper.
  8. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the asparagus is tender.
  9. Remove the toothpicks before serving. Serve immediately for best flavor.
