Ingredients
- 4 boneless skinless chicken breasts
- 4 slices Swiss cheese
- 4 slices ham
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 pound asparagus, trimmed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Flatten each chicken breast to about 1/4 inch thickness using a meat mallet.
- Place a slice of Swiss cheese and a slice of ham on each chicken breast. Roll up tightly and secure with toothpicks.
- In a shallow dish, mix breadcrumbs, grated Parmesan cheese, salt, black pepper, and dried thyme.
- Coat each chicken roll in the breadcrumb mixture, pressing to adhere.
- Arrange the chicken rolls on one side of a large sheet pan. Drizzle with 1 tablespoon of olive oil.
- On the other side of the sheet pan, spread trimmed asparagus spears. Drizzle with remaining 1 tablespoon of olive oil, and season with a little salt and pepper.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the asparagus is tender.
- Remove the toothpicks before serving. Serve immediately for best flavor.
