Ingredients

  • 1 1/2 pounds skirt steak, trimmed
  • 2 bunches bok choy, halved lengthwise
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons white miso paste
  • 1 tablespoon lemon juice
  • 1 zest of 1 lemon
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the skirt steak on one side of a large sheet pan, and bok choy halves on the other side.
  3. Drizzle the olive oil over both steak and bok choy, then sprinkle with salt and pepper.
  4. In a small bowl, mix the softened butter, miso paste, lemon juice, lemon zest, and minced garlic until well combined.
  5. Spread half the lemon-miso butter over the steak.
  6. Roast in the preheated oven for 15-20 minutes, or until the steak reaches your desired level of doneness.
  7. Remove from the oven and let the steak rest for 5 minutes.
  8. Spread the remaining lemon-miso butter over the roasted bok choy.
  9. Slice the steak against the grain and serve with the bok choy.
