Ingredients
- 1 1/2 pounds skirt steak, trimmed
- 2 bunches bok choy, halved lengthwise
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter, softened
- 2 tablespoons white miso paste
- 1 tablespoon lemon juice
- 1 zest of 1 lemon
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Place the skirt steak on one side of a large sheet pan, and bok choy halves on the other side.
- Drizzle the olive oil over both steak and bok choy, then sprinkle with salt and pepper.
- In a small bowl, mix the softened butter, miso paste, lemon juice, lemon zest, and minced garlic until well combined.
- Spread half the lemon-miso butter over the steak.
- Roast in the preheated oven for 15-20 minutes, or until the steak reaches your desired level of doneness.
- Remove from the oven and let the steak rest for 5 minutes.
- Spread the remaining lemon-miso butter over the roasted bok choy.
- Slice the steak against the grain and serve with the bok choy.
