  • 1/2 tsp turmeric, ground
  • 2 tbsp butter

Instructions

  1. Rinse the basmati rice in several changes of water until the water is clear. Soak it in cold water for 30 minutes, then drain.
  2. In a large bowl, combine yogurt, saffron, turmeric, and a pinch of salt and pepper. Add chicken thighs, ensuring they are well coated, and marinate for at least 1 hour or overnight in the refrigerator.
  3. Heat vegetable oil in a skillet over medium heat. Add marinated chicken thighs and cook until browned on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, melt the butter and add the drained rice. Stir for a few minutes until the rice is well-coated with butter.
  5. Add 2 cups of water to the skillet with rice and bring to a boil. Then, reduce the heat to low, cover, and simmer for 10 minutes until partially cooked.
  6. In a separate saucepan, combine sour cherries and sugar, cooking on low heat until sugar dissolves and cherries soften, about 8-10 minutes.
  7. In a large pot, layer the partially cooked rice, browned chicken, and sour cherry compote. Cover and cook over low heat for 30 minutes until the rice is fully cooked and flavors meld.
  8. Serve warm, optionally garnishing with chopped nuts for added texture.
