Stuffed Artichokes, or Zeytinyağlı Enginar, is a traditional Turkish dish cherished for its blend of tender artichoke hearts and a savory filling. This recipe combines the earthy flavor of artichokes with a mixture of rice, herbs, and spices, capturing the essence of Turkish cuisine. Ideal as a vegetarian main or a side dish, Stuffed Artichokes offer a unique taste and elegant presentation, making them a delightful addition to any meal.

Ingredients

  • 4 large artichokes
  • 1 cup rice, rinsed
  • 1/2 cup olive oil
  • 1 whole onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 cup water
  • 1 whole lemon, juiced

Instructions

  1. Prepare the artichokes by cutting off the stem and the top third. Remove the tough outer leaves and scoop out the choke with a spoon.
  2. In a bowl, combine the rice, onion, garlic, dill, and parsley. Season with salt and pepper.
  3. Stuff each artichoke with the rice mixture, ensuring the filling is packed in tightly.
  4. Place the stuffed artichokes in a pot, then pour in the water, olive oil, and lemon juice.
  5. Cover the pot and bring to a simmer over medium heat. Reduce the heat to low and cook for 45-60 minutes, or until the artichokes are tender.
  6. Once cooked, remove the artichokes from the pot and let them cool slightly before serving.
