Ingredients
- 4 medium kohlrabi
- 1/2 cup quinoa, cooked
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 cup bread crumbs
- 1/4 cup parmesan cheese, grated
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut off the tops of the kohlrabi and scoop out the center to create a hollow bulb, leaving enough flesh to form a stable cup.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat, and sauté the onion and garlic for 2 to 3 minutes until they are translucent.
- Add the cooked quinoa, vegetable broth, thyme, and oregano to the saucepan. Cook for about 5 minutes, stirring occasionally, until the mixture thickens. Adjust seasoning with salt and pepper to taste.
- Fill the hollowed kohlrabi with the quinoa mixture, pressing down gently to pack it in.
- In a small bowl, combine bread crumbs, parmesan cheese, and 1 tablespoon of olive oil. Mix well to create a crumbly topping.
- Top each stuffed kohlrabi with a generous amount of the bread crumb mixture.
- Place the kohlrabi in a baking dish with about 1/4 inch of water at the bottom to prevent sticking and to help steam the kohlrabi.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the topping is golden brown.
- Allow to cool slightly before serving.
