Ingredients

  • 4 large yellow onions
  • 1 cup rice, cooked

  • 2 Tbsp olive oil
  • 1 tsp cumin, ground
  • 1/2 tsp cinnamon, ground
  • 1/2 tsp turmeric, ground
  • 1 cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the onions and peel them. Carefully hollow out the onions, leaving a thick shell. Reserve any removed onion flesh for another use.
  3. In a bowl, mix the cooked rice, chopped parsley, dill, and mint, olive oil, cumin, cinnamon, turmeric, and a pinch of salt and pepper.
  4. Stuff the rice mixture firmly into the hollowed-out onions.
  5. Place the stuffed onions upright in a baking dish and pour the vegetable broth around them.
  6. Drizzle the stuffed onions with a little more olive oil and cover the baking dish with aluminum foil.
  7. Bake the onions for 30 minutes covered, then remove the foil and bake for an additional 15 minutes until the onions are soft and the tops are slightly browned.
  8. Serve the stuffed onions warm, optionally garnished with additional fresh herbs.
