Ingredients

  • 8 whole squash blossoms
  • 1 cup cooked rice

  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Carefully wash the squash blossoms and remove the pistil from inside each flower.
  2. In a bowl, combine the cooked rice, diced tomatoes, chopped parsley, chopped mint, olive oil, salt, and black pepper. Mix well.
  3. Using a spoon, gently stuff each squash blossom with the rice mixture, twisting the petals slightly to seal them.
  4. Arrange the stuffed squash flowers in a steamer basket over boiling water. Steam for 20-25 minutes until the flowers are tender.
  5. Remove from the steamer and let them rest for a few minutes before serving.
