Ingredients
- 8 whole squash blossoms
- 1 cup cooked rice

- 1/4 tsp black pepper
Instructions
- Carefully wash the squash blossoms and remove the pistil from inside each flower.
- In a bowl, combine the cooked rice, diced tomatoes, chopped parsley, chopped mint, olive oil, salt, and black pepper. Mix well.

- Arrange the stuffed squash flowers in a steamer basket over boiling water. Steam for 20-25 minutes until the flowers are tender.
