- 1 whole chicken
- 1 cup almonds, blanched and slivered
- 1/4 cup sugar

- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp coriander, ground
- 1 tsp cumin, ground
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 tbsp lemon juice
- 1/2 cup butter, melted
- 1 package phyllo dough
- 1 tbsp powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (180°C).
- Boil the whole chicken in a large pot until tender. Once cooked, shred the meat and discard the skin and bones.
- Toast the slivered almonds in a dry pan until golden brown.
- Combine the almonds with sugar and cinnamon in a bowl; set aside.
- In a large skillet, heat olive oil over medium heat. Sauté the onions and garlic until softened, about 5 minutes.
- Stir in the shredded chicken, ground ginger, saffron threads, ground coriander, ground cumin, fresh parsley, fresh cilantro, and lemon juice. Cook for another 5 minutes until everything is well combined and heated through.
- Lay a sheet of phyllo dough on a greased baking pan, brush with melted butter, and repeat with several layers.
- Spread the chicken mixture evenly over the layered phyllo dough.
- Fold the excess phyllo dough over the filling to seal. Brush the top with more melted butter.
- Bake in the preheated oven for 30–35 minutes, or until the pastry is golden brown and crisp.
- Before serving, dust the top with powdered sugar.
