  • 1/4 cup water
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 qt vegetable oil, for frying

Instructions

  1. In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, baking soda, and salt. Pulse until mixture is coarse but not pureed.
  2. Transfer the mixture to a bowl and stir in water, flour, and baking powder. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld and the mixture firm up.
  3. Heat the vegetable oil in a deep pan to 350°F (180°C).
  4. Shape the chickpea mixture into small balls, roughly the size of a walnut.
  5. Carefully place the balls into the hot oil in batches, avoiding overcrowding, and fry until golden brown and crispy, about 3-4 minutes per batch.
  6. Remove the falafel with a slotted spoon and drain on a plate lined with paper towels. Serve hot with tahini sauce, pita bread, and salad.
