Ingredients
- 1 whole lobster tail, cooked and chopped
- 1 cup arborio rice
- 1/2 cup dry white wine
- 4 cups chicken broth
- 1 Tbsp olive oil
- 1 medium shallot, finely chopped
- 8 oz mixed wild mushrooms, sliced
- 1/2 cup parmesan cheese, grated
- 2 Tbsp butter
- 1/4 cup fresh parsley, chopped
Instructions
- Warm the chicken broth in a saucepan over low heat.
- In a separate pan, heat the olive oil over medium heat and sauté the shallot until translucent, about 2-3 minutes.
- Add the mushrooms to the pan and cook until they release their juices and become tender, about 5 minutes.
- Stir in the arborio rice and cook for a few minutes until the rice grains are translucent around the edges.
- Pour in the white wine and cook until it is fully absorbed by the rice.
- Begin adding the warm chicken broth one ladle at a time, stirring frequently. Allow each addition of broth to be absorbed before adding the next.
- Continue adding broth and stirring until the rice is creamy and al dente, about 20-25 minutes in total.
- Stir in the cooked lobster, parmesan cheese, butter, and parsley until well combined and heated through.
- Taste and adjust seasoning with salt and pepper, if needed.
- Serve the risotto immediately, garnished with additional parmesan and parsley, if desired.
