  • 1/2 cup coconut milk
  • 1/4 cup maple syrup
  • 3 tbsp chia seeds
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the mango puree, coconut milk, and maple syrup until well combined.
  3. Add the chia seeds to the wet mixture and let it sit for 10 minutes to thicken slightly.
  4. In another bowl, sift together the almond flour, baking powder, and salt.
  5. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid over-mixing to maintain a light texture.
  6. Using a spoon, fill each muffin liner about 3/4 full with the batter.
