Buckwheat Apple Cider Donuts offer a delightful blend of earthy buckwheat and sweet apple cider, perfect for fall. These baked donuts provide a healthier option, avoiding the oiliness of frying. Infused with cinnamon and nutmeg, each bite delivers warm, comforting flavors, while an apple cider glaze adds a sweet finish. Enjoy them as a cozy breakfast or an inviting snack, paired with coffee or on-the-go. Their light texture and autumn-inspired taste make them a seasonal favorite, appealing to both traditional donut lovers and those seeking something a bit different.

Ingredients

  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 pinch salt
  • 1/2 cup apple cider
  • 1/4 cup maple syrup
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a bowl, whisk together buckwheat flour, all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In a separate bowl, mix together apple cider, maple syrup, melted butter, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Spoon the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into a donut comes out clean.
  7. Remove the pan from the oven and let the donuts cool in the pan for 5 minutes.
  8. Carefully transfer the donuts to a wire rack to cool completely.
  9. For the glaze, whisk together the powdered sugar and 2-3 tablespoons of apple cider until smooth and desired consistency is reached.
  10. Dip the top of each cooled donut into the glaze, allowing excess to drip off, and place back on the wire rack to set before serving.
